The Northern Spy Apple originated in New York in 1800. It is known as one of the best cooking apples. The Northern Spy stays crisp and juicy for long periods in storage. It has a tart aromatic taste.

The Northern Spy apple has a skin colour that is green ground and flushed with red stripes where not shaded. The tree produces fairly late in the season and stores very well. The white flesh is juicy, crisp and mildly sweet with a rich, aromatic subacid flavour, noted for high vitamin C content. Its characteristic flavour is more tart than most popular varieties, and its flesh is harder/crunchier than most, with a thin skin.
